xx Easy Party Hors D'oeuvres

Since I am all about keeping it easy when entertaining.

Crab Delights (makes 48)

1 6 oz can crab meat, drained
5 oz sharp processed cheese spread
1/4 cup butter, softened
2 tablespoons mayonnaise (or miracle whip!)
1 pinch garlic galt (or powder)
2 tablespoons chopped fresh (or freeze dried) parsley
6 English muffins, cut in half.

Preheat oven to 400 degrees
Combine all of the above (except the muffins) and spread on the muffin halves.
Cut into quarters
Bake for about 15 min.  Broil for the last minute.


Far East Tuna Canapes (makes 24)

1 6 oz can tuna, drained and flaked
3 tablespoons mayonnaise (or miracle whip!)
3 tablespoons finely chopped pecans (can buy a bag with them already chopped)
1/4 cup crushed pineapple, drained
1/8 teaspoon curry powder
24 ritz crackers

Mix ingredients (except the crackers).  Top the crackers.  Micro for a minute.  (Or they're pretty good cold, too.)


Satay Chicken Pizza (makes 16)

2 skinless, boneless chicken breast halves, chopped.  (Short cut:  Perdue short cuts -- the chicken is already chopped and cooked!)
1 cup prepared Thai peanut sauce
1 bunch green onions (scallions), chopped
4 small pita breads
cheese of your choice (I like the 3 cheese shredded italian blend)

If you didn't go with the Perdue short cuts, saute the chicken until cooked through.
Top the pita breads with all the other stuff
Bake at 425 degrees for 10 - 12 minutes
Cut into quarters (w/ a pizza cutter is easiest)

xx Nappa Cabbage Salad

Dressing:
1/4 c vinegar
1/2 c sugar
3/4 c oil
2 T soy sauce
Boil for 1 minute, then cool

Topping:
2 pkg Ramen noodles (omit flavor packet), crushed
1 pkg. Slivered almonds
1 oz sesame seeds
1 T butter

Salad:
2 heads Napa Cabbage, shredded
1 bunch green onion, chopped

Saute topping ingredients until lighlty brown.  Set aside to cool.  Combine salad, topping and dressing just before serving.  Keep ingredients separate to store...

xx BBQ Sauce

I don't have an exact recipe, I just ad lib it.  My kids always ask for it and now it is the only BBQ sauce they will use.

1 can tomato sauce
brown sugar
liquid smoke
garlic powder

just add last 3 ingredients to taste and there ya go.  Just be careful with the liquid smoke, a little goes a long way.

I've never made this before, but I am making it for my companies holiday party.

I am using a similar recipe that I use for BBQ ribs.

Dry rub
5 parts chili powder
3 parts dark brown sugar
2 parts cumin
1 part freshly ground black pepercorns
1/2 part ground sea salt
1/2 part red pepper flakes


Brisket
Applejuice
BBQ sauce

Mix dry rub ingrediants together and coat both sides of meat. Make enough to cover the meat. I normally start with about 1/8 to 1/4 cup chili powder and add the other stuff until it looks right. I don't measure anything.

Cover and marinate for 24 hours.

Heat oven to 250 F. or use large crock pot.

 Pour 1 - 2 cups apple juice in the bottom of a large roasting pan. Put a rack into the bottom of the roaster so the meat will be held above the liquid. Add dry rubbed meat. Cover tightly

Cook 12 - 24 hours. Occassionally check to make sure liquid remains on the bottom of the roaster.

Drain Liquid. Shred meat. Add BBQ sauce. Cook 1 additional hour.

Serve on buns.


I'll let you know tomorrow if it is any good.

1 can black beans (rinsed and drained).
1 can sweet corn (drained)  (For the corn and beans, I get the can that's
the size of a campbells soup).
1 jar of salsa (I just use the spartan brand in mild)
4 Tablespoons of sugar
2 Tablespoons of corn syrup
1 Teaspoon of Worcestershire sauce
1 Teaspoon of Apple Cider Vinegar
mix everything and let it cool in the fridge for 2-3 hours.
You can make half of it because the measurements are easy to divide. If
you're serving it for more than 4-5 people, then make the whole recipe.
Otherwise, make half.

I add a lil extra of worcestershire...if you like a little bite...

You cannot stop eating it...

xx Chicken-n-Rice Casserole

Butter large baking baking dish

Pour in :

1 1/2  Cup Minute Rice
1 Can Cream of Mushroom Soup
1 PKG Knorrs Vegetable Mix
3/4 Cup Water
1 TBLSP butter

Mix well...

Place 4 chicken breasts on top of rice mixture and season with favorite herbs.  (My favorite is Italian herbs or Garlic Pepper)

Cook 1 hr 15 min @ 350 covered and 15 more minutes uncovered to slightly brown chicken...

Delicious...

4  -- 2" Iowa Chops
Roll in flour and b rown in 1 Tblsp. crisco (salt and pepper both sides)

Place chops in buttered casserole dish.

Barbecue Sauce:

1 C Ketsup
1/2 C Brown Sugar
1 1/2 tsp powdered mustard
1/4 tsp worchestshire sauce

Spread 1/2 of the sauce on the chops on 1 side and bake in covered dish 1 hour @ 350...Turn and put the other 1/2 sauce on other side-recover for 1 more hour @ 350...

So tender you can cut with a fork....mmm Tongue

What is a reasonable price for a personal chef?

I have been quoted $400 a month which would include the groceries, the meal prep (including cooking), and freezing in portion size containers of twelve meals for the three members of our household. 

I suspect I pay more in groceries alone than this, but I'm not sure.  Does anyone have any information?

xx Salmon Steaks with blanched Veg & Brown Rice

Set the Brown Rice (as this will take the longest)

Get two boneless salmon steaks. Place each on enough tinfoil to wrap it around. In a seasoning mixer, mix paprika, fennel seeds, black pepper, medium hot curry powder, soy sauce and lemon juice. Make sure everything is mixed thoroughly. Make enough miture to cover all sides of both steaks.

Roll the steaks in the mixture (it should be quite thick) until they are covererd. Place them on the tinfoil. Get some cherry tomatoes, half them and place it on and around the steaks to add further moisture. Wrap them securely in tinfoil and place in the oven. Cook at 240C for 25minutes.

Vegetables:

Slice some stemmed brocoli (not the round one, but the little individual ones) longways in half. Do the same with some babycorn. Cut some leeks in circles. Blanch them in seasoned (with black paper or all purpose seasoning - just a touch though) water (meaning boil them in a small pot with water barely covering the veg - had to look that up first time I did it  Cheesy) for about 10/15minutes (or until soft to taste).
Dont drain. Pick the vegetables out with a spoon/ladle and place on plate. With the remaining seasoned water you can make a quick gravy.

Salmon should be done by now. Take out and serve on a bed of brown rice with vetables at the side. You can pout the gravy over it all, or leave for each guest to add as they wish.

One of my fav meals to make for friends.  Grin
