If you haven't lost your appetite for what ever reason what is it that you default to when you get hungry?

I have a short list of favorites.  Tonight I slap together 2 strawberry jelly sandwiches and washed it down with a tall glass of MinuteMade fruit drink.

xx Coconut Cake?

ok, so one of my really good friends has a birthday coming up this weekend, and since i love to bake goodies, i told him i would bake him any kind of cake he wanted.  he wants a coconut cake, which i have never made and dont like. anyone got any good recipes??  it is so hard to make something for the first time you dont even like, because you cant even taste test it to make sure it came out ok!

xx More Crock-Pot Recipes

We've done this before, but I'm looking for some new ones with the season change. Anyone got a new one they like?

I threw together a pork roast (cheap), some balsamic vinegar, salt & pepper and Pampered Chef's Citrus and Basil rub (what I had on hand on a Sunday) and my boys both loved it.  I didn't add any liquid, just salt & peppered first (didn't even sear first), then added the rest later.  I'm going to add carrots, onions and red potatoes at the end next time.

xx Best Ever Meat Loaf

Meat Loaf.......I know the giggles, but this one is good.  I've been searching for a good recipe for a couple years and they all turn out ho-hum.  This one is different.  People say, "ummm"  plus the leftovers are great for a busy day.

I copied the original recipe.  I made a few tweaks, but the original recipe is great too!

I used 3 red peppers for the onions and scallions (onions give my bf gas) 

I added 1 tablespoon of A-1 and chopped the veges in a food processor.  You can't even tell they are in there, but add moisture and sweetness. 

I also used a pound of sage sausage instead of the ground pork. 

2 cups finely chopped onion
1 tablespoon minced garlic
1 celery rib, chopped fine
1 carrot, chopped fine
1/2 cup finely chopped scallion
2 tablespoons unsalted butter
1 teaspoon salt
1 1/2 teaspoons freshly ground black pepper
2 teaspoons Worcestershire sauce
2/3 cup ketchup plus additional as an accompaniment if desired
1 1/2 pounds ground chuck
3/4 pound ground pork
1 cup fresh bread crumbs
2 large eggs, beaten lightly
1/3 cup minced fresh parsley leaves (didn't use this)

Preparation

Preheat oven to 350°F.

In a large heavy skillet cook onion, garlic, celery, carrot, and scallion in butter over moderate heat, stirring, 5 minutes. Cook vegetables, covered, stirring occasionally, until carrot it tender, about 5 minutes more. Stir in salt and pepper, Worcestershire sauce, and 1/3 cup of ketchup and cook, stirring, 1 minute.

In a large bowl combine well vegetables, meats, bread crumbs, eggs, and parsley. In a shallow baking pan form mixture into 1 10-by 5-inch oval loaf and spread remaining 1/3 cup ketchup over loaf.

Bake meat loaf in oven 1 hour, or until a meat thermometer inserted in center registers 155°F.

xx Decorative Vinegar & Oil Jars (Making and Cooking)

There was a place here locally that taught how to make such beautiful bottles with various vinegar and oil cooking staples with various fruits and vegetables for cooking - as well as taught cooking and tasting of these recipes.  

I can't seem to see on their site where they do that any more and am not really having any luck googling a place close by that teaches this.  Any suggestions?

xx I was eating cherries, and the unthinkable happened.

I got a bag of cherries the other day from the grocery store. You know the ones, they're red, they have a pit, you hold the stem and eat around the pit, spit the pit out and chew and swallow the rest?



Well cherries are very prone to that white mold..either around the hole where the stem comes out, or around any bruising that may have occurred..and after a few days it's not uncommon for a few cherries to be so inflicted.

So as I read the boards and search for my next girlfriend I'm absentmindedly eating cherries, checking the bowl every so often...I find one that has a fair amount of mold on it..I push it to the side of the bowl and keep eating.

Well, I just finished the bowl of cherries and all that's left is a bunch of pits. The moldy cherry is...gone.

Gulp.

xx baked crab rangoon (low fat)

1 can (6oz) white crabmeat, drained, flaked
4 oz (1/2 of 8oz package) neufchatel cheese, softened (you know, the low fat cream cheese stuff)
1/4 cup thinly sliced green onions
1/4 cup light mayonnaise
12 won ton wrappers

preheat oven to 350

mix crabmeat, cheese, onions, and mayo

spray 12 muffin cups with cooking spray.  gently place one won ton wrapper in each cup, allowing edges of wrappers to extend above sides of cups.  fill evenly with crabmeat mixture.

bake 18-20 minutes or until edges are golden brown and filling is heated through.  serve warm.  garnish with chopped green onions if desired.

xx Homemade Jam

Well today we got a pressure cooker/canner and made two batches of jelly.  The first was with storebought strawberries.  The second was a mixture of the strawberries with blueberries and blackberries off the bushes in our yard.

They look successful, tomorrow we will let you know how they taste...... Grin
