Very easy quiche recipe you can play with :) jen: Ingredients:
homemade or storebought deepdish single pastry crust
1 10 oz. package frozen spinach, defrosted
4 - 6 oz. crumbled feta cheese
1/2 cup cottage cheese
6 green onions, chopped
1 tbsn. olive oil
1 tsp dried basil
1/2 tsp pepper
1/4 tsp garlic salt
4 eggs
1/2 cup milk
Preheat oven to 400 degrees.
Squeeze excess liquid from the spinach and place in the bottom of the pastry crust. Crumble feta on top of the spinach.
In a mixing bowl or blender, mix the remaining ingredients. Pour liquid over the spinach & feta.
Bake at 400 for approx. 20 minutes and then reduce heat to 350 and cook an additional 20 - 30 minutes or until done (fork comes out clean from the center)
Ok...now here is how I play with it.
I like LOTS of stuff in my quiche. I will usually add sauteed mushrooms, extra shredded cheese or even meats such as ground garlic sausage. Depending upon how much extra stuff I put in or how much spinach I want at the time, I may only use 1 package of spinach for 2 quiches and just double the liquid portion of the recipe. I sometimes change the herbs that I use and substitute for the basil...
You can start with the liquid ingredients and also just add whatever you want - broccoli, other cheeses, ham & cheese, and so on and so on :)
